It is all too rare to find gnocchi made from really fresh potatoes. Potato flakes, as they are usually used, are out of the question for "Kusi". In Sarnen, he produces the delicacy himself from scratch with his "Pastarazzi's". The dough must always be adapted to the natural conditions of the potatoes. As a rarity, the durum wheat semolina is also not imported, but sourced from Rafz in the canton of Zurich.

Preparation
Cook the gnocchi for 6 minutes in boiling salted water (just before it bubbles). Remove and toss in a frying pan with sage butter, olive oil or your favorite sauce. To prevent the dough from clumping, we recommend preparing it while frozen (do not defrost).
